Step 1
In a baking dish large enough to contain the fish, combine the parsley, thyme, oil, shallot, lemon zest and garlic. Add the halibut filets and turn to coat. Cover and refrigerate for 1 hour.
Step 2
When ready to cook, prepare the grill. If using a gas grill, preheat the grill to high. If using a charcoal grill, start the charcoal or wood briquettes; when the briquettes are ready, distribute them evenly under the cooking area for direct heat. Brush the grate with olive oil.
Step 3
Remove the halibut filets from the marinade and season with salt and pepper to taste. Grill for about 2 minutes per side, or until opaque.
Step 4
Meanwhile, in a small pan over low heat, add the butter, lemon juice and hot pepper sauce to taste and heat, stirring occasionally, until the butter is melted.
Step 5
To serve, place the fish atop a serving of Cheddar Cheese Grits and drizzle some of the butter sauce over it.
